Travelling has always been an exciting and large part of my life. My father has been a commercial pilot since before I was born and my mother was cabin crew for several years. Throughout my childhood I was lucky to travel all over the world and experience many different cultures and holiday styles. One of my favourite trips was a relaxing holiday in Barbados with my grandparents.

Having travelled extensively during my childhood, I ensured that in my university holidays I continued my travels to further explore the world. After I graduated, I moved abroad to Malaga for a couple of months. This confirmed my love for stunning beaches and places full of history and culture. I have found the Caribbean to be one of the best locations in the world for these, and I love to share my passion with others.

Antigua cooking class

What’s the best local dish you’ve tasted?

The best local dish I’ve tasted has got to be rum cake. I normally lean towards savoury rather than sweet, however, the Caribbean rum cake is something to relish. Sticky, sweet and lashings of rum running through the sponge is hard to dislike! I learnt to bake this in my Antiguan cooking class and it's as simple as baking a Victoria Sponge, albeit rather more alcoholic.

What’s your most vivid travel moment?

My most vivid travel moment has got to be my rum cooking class in Antigua. I'm improving my culinary skills in my spare time, so what a perfect opportunity this was for me to learn something new. This experience was also my first-time trying rum, which I’m certain enhanced the experience even further. We made three courses, all of which have a Caribbean origin. The starter was fried plantain chips, the main course was rum chicken skewers decorated with spices of our choice, and the dessert was a rum cake. I was in charge of the ‘liquids’ in the rum cake and I accidentally tripled the quantity! Safe to say this was a great experience and one I would recommend to anyone.

The Maldives

Where would you love to travel next?

Next, I would love to travel to the Maldives. I love relaxing on white sand beaches, reading a good book and I also adore snorkelling and exploring reefs. As the Maldives are famous for their stunning beaches and azure coloured, fish infested waters, this is the next stop on my travel list.
